I made this recipe up myself so I'm not exactly sure on the proportions (aka definitely still a work in progress)
Ingredients
1 large onion, diced
2 cloves of garlic, minced or pressed
1/2 tsp cumin
1/2 tsp paprika
salt
2 can black beans, drained and rinsed
1-2 cups frozen corn
1 can diced tomatoes and green chilis, drained
and the ingredients for corn bread
plus 1 cup of grated cheese (I recommend the cheddar/jalapeno mix)
Directions:
1. saute onion and garlic until onions are translucent. Add black beans and saute until heated through.
2. Add cumin and paprika. Stir. Salt to taste (abt 1/2 tsp)
3. Add frozen corn and heat through.
4. Put the mixture into a glass casserole dish, stir in the diced tomatoes and chilis.
5. Make the cornbread according to the directions and stir in the cup of grated cheese.
6. Layer cornbread batter over the bean mixture, cook at about 400 degrees Fahrenheit til cornbread is done (about 30 minutes)
serve with chips or sour cream. the chilis make it spicy! :)
