I like this recipe because I always have problems making a really good stir fry: so rather than just throwing things in however, following the steps made everything turn out really tasty and crispy. The same principles apply to any protein, vegetables, or sauce you'd like to substitute.
Ingredients:
extra-firm tofu, cubed
oil
frozen peas and corn
pepper and salt
chili powder
garlic, minced
vegetable broth
soy sauce
rice, cooked in vegetable broth
Steps:
1. get your pan really, really hot. Like smoking hot. add the oil
2. brown tofu on all sides. Season with salt, pepper, and chili powder.
3. remove tofu, wipe out the excess oil
4. if I were using fresh vegetables, I would have pressed out the extra water so that the vegetables would fry up nice and crisp. As it was, I just added more oil to the very hot pan and tossed the vegetables for a bit.
5. Add vegetable broth, a few dashes of soy sauce, and garlic. Cook for a few minutes.
6. Re-add cooked tofu and heat through. Serve over rice.
How much FUN is this! And I still can't get over the fact that the child who would not let a lima bean past her lips, let alone a piece of rutabaga, now learns and eats and lives TOFU ! ! ! Just goes to show, it ain't over 'till it's over.
